Working from home means that you have the extra time you need to make a warm and nourishing lunch. In her latest recipe, Lilly Higgins shows us how to make a quick and easy toasted cheese and salsa pitta.
Here’s what you’ll need:
1 tin cooked kidney or black beans
1/2 tsp ground cumin
1/2 tsp smoked paprika
8 cherry tomatoes
1 small red onion, finely diced
Juice of 1 lime
3 tbsp fresh coriander, chopped
6-8 slices or mature white cheddar
2-4 pitta breads
1. Drain the beans and mash them well with the cumin, paprika and salt until fairly smooth
2. Mix the diced tomatoes, onion, coriander and lime. Season with salt
3. Warm the pitta by placing it in a sandwich toaster while it heats up. Once the pitta is warm, cut in half.
4. Fill with the mashed beans, salsa and cheese. Toast till the cheese has melted and the outside of the pitta is golden
